The ice-forming process has been studied in order to eliminate the presence of air bubbles and to obtain very clear finger ice.
To make "finger" ice, the ice is formed around the fingers of the evaporator immersed in a water reservoir.
When a sufficient thickness of ice is reched, the gas cuculation goes into reverse and the excess water is channeled out, the ice becomes detatched and falls in to the storage space. The cycle then starts again.
